Mar 6 - Zucchini Thyme Koftas


Koftas have a long history in terms of their origins and the variants spawned thereof as cultures mixed, clashed melded and assimilated. The grand daddy ancestor of this beloved North Indian dish was likely meatballs made out of lamb meat and it originated in the Middle East and spread out and assumed various local avatars as the Ottoman /Islamic influence spread around in Asia and North Africa.
From meat, to vegetarian, this particular version is purely vegan. Even the gravy that these morsels of deliciousness are drown in is vegan. Here's the link to the recipe.
