Feb 19 - Punjabi Choley


If Bhature (deep fried flatbread) was featured on the blog yesterday, then its very highly likely that it will be followed by a traditional Punjabi Choley. Now there are multiple versions of choley (chickpeas) that I cobble up without giving the process a second thought, but there are those special days when nothing, absolutely nothing except my mother's particular recipe will do. its a long winded labor of love (involving multiple stages of adding the various ingredients, and brewing cups of tea (not for me, but for the dish), but the results are spectacularly worth it. Amma got that recipe from an old newspaper cutting from a  Baishaki special. I still have that yellowed piece of newsprint tucked away safe.
