Feb 11 - Plain Kadhi


Kadhi - the instant you hear the word, it automatically gets associate with a savory yogurt gravy. The simplest ones such as this particular one from a couple of weeks back was just a plain tempering of cumin, cloves, cardamom and cinnamon, asafetida and minced ginger. swirl in whisked kefir with a spoonful of chickpea flour added in for thickening and the cilantro stems you have left over, and voila.. a comforting soupy gravy to pour over plain hot rice. perfect comfort for cold winter evenings.

This dish probably has as many variations as there are states in India, and I hope to slurp my way through all the states in an ordered fashion through the course of this year. Stay tuned.
